Erythritol is a sugar-alcohol that is derived from corn through a process of yeast fermentation. Erythritol is non-nutritive (meaning it provides no nutritional benefits) and digests very quickly through the body, leaving little to no effects on blood sugar levels. Erythritol is found naturally in many foods and beverages like grapes, pears, mushrooms, wine and yogurt.
